Created trees plus other foliage using photogrammetry and traditional modeling with Unreals Pivot Painter for movement. I set up a shader system for the leaves using gradient mapping and parameters to control the amount of leaves. That means that the studio could tweak the values and create variations and different looks for different areas and times of the year directly in the editor. See some screenshots from the game.
